Recipe? Those sound fucking amazing.
This one was a super quick throw together from altering boxed mixes.
Lazy (ish) Butterscotch Hot Chocolate Cupcakes with Marshmallow Meringue Frosting:
1 box chocolate cake of choice
Marshmallows (I happened to have some of those dried marshmallows from hot chocolate packages, but you can just cut normal marshmallows into tiny pieces)
1 box butterscotch pudding mix
Eggs
Butter
Milk
Nutmeg for garnish
Marshmallow meringue frosting (Again, I had a mix for this, but this recipe is good)
Prepare box according to the instructions EXCEPT:
Add pudding mix to the dry ingredients
Add 1 extra egg
Use melted butter instead of oil
Use milk instead of water
Fold in marshmallows
Bake as directed, allow to cool completely before frosting.
Make your meringue frosting.
Scoop the meringue out with a spatula and swirl around the top of the cooled cupcakes, and then bring the spatula straight up at the center so you get a little curl at the top.
Garnish with nutmeg.
Enjoy ALL THE SUGAR. (Seriously, this is a very sweet frosting, so I would urge you toward a dark chocolate cake IMO. The meringue also over powers the butterscotch a bit, but the pudding still adds moisture.)
